Mashed Cauliflower

Tastes just like mashed potatoes. Honest.

Ingredients

16 oz of cauliflower, chopped
3 tbsp heavy cream
1 tbsp unsalted butter

2 oz parmesan cheese, grated
1/2 tsp sea salt

Instructions

Place a microwave-safe bowl on scales and set the cauliflower on a cutting board. Remove the greenery, quarter the head, and slice out the stem as shown in this video. No need to be fussy and separate out individual florettes—just chop up each remaining quarter and add the pieces to the bowl until you have 16 oz. Add cream and butter to the bowl and microwave on high for about ten minutes until the cauliflower is fork tender. Add cheese and salt, toss with two spoons, then blend with stick blender until creamy smooth.
