Mashed Cauliflower

Tastes just like mashed potatoes. Honest.


16 oz of raw cauliflower or Cauliflower Florets
2 tbsps heavy cream
2 tbsps unsalted butter

2 oz parmesan cheese, grated
1/2 tsp sea salt


Cauliflower Florets
The easy way. Buy a bag of florets and dump them in a bowl. Riced cauliflower is not recommended as it has a metallic taste.

Raw Cauliflower
The hard way. Place a microwave-safe bowl on scales and set the cauliflower on a cutting board. Remove the greenery, quarter the head, and slice out the stem as shown in this video. No need to be fussy and separate out individual florettes — just chop up each remaining quarter and add the pieces to the bowl until you have 16 oz.

After placing 16 oz of cauliflower pieces in a bowl add cream and butter to the bowl and microwave on high for 10 minutes until the cauliflower is fork tender. Add cheese and salt, toss with two spoons, then blend with stick blender until creamy smooth.
