Butter Cookies

Cinnamon cookies are pictured below. Makes 20 cookies. Based on a recipe at Keto Connect.

Ingredients

1/2 cup (one stick) salted butter, softened
1/2 cup Confectioners Swerve

1 tbsp beef gelatin (for chewy cookies)
1 tsp baking powder
1 tsp vanilla extract
Optional: 1 tsp Vietnamese Cinnamon
1 egg

1 1/2 cups almond flour
-----
Optional: fold in 1/2 cup Lily's Dark Chocolate Chips (cheaper at Whole Foods)

Instructions

Preheat the oven to 350°F. Using a hand mixer (2 beaters) combine ingredients, mixing as you go, in the order listed. Line a baking sheet with parchment or use a silicone coated pan and place the cookies with a cookie scoop. Quickly tap the top of each cookie lightly with a fork a few times to flatten a bit then bake for 10 minutes (cinnamon version). While they may look like they are not done they do firm-up after cooling. Of course every oven is different so you'll need to experiment. Keeps well when refrigerated.
